The perfect mid morning snack plus some food blog inspiration.
A few months ago I stumbled across The Crunchy Radish on Instagram as I tend to do when I’m procrastinating. Immediately I liked her feed, featuring fresh, whole food, seasonal ingredients and recipes. Definitely check out her insta and blog if you have not already. She is a registered dietitian and while not all of her recipes are plant based/vegan, plenty of them are. Whilst following The Crunchy Radish, I noticed one day she was posting about a fellow blogger’s cookbook that had recently been released, The First Mess. (Another wonderful blog for plant based meal inspiration and beautiful photos). Crunchy Radish did a follow up insta story and blog post featuring these breakfast cookies from the First Mess and they looked too tempting for me to pass up.
I took to recreating the breakfast cookie last weekend and they certainly did not disappoint. When Andrew and I lived in Nashville, we would make a more simple breakfast cookie almost weekly, featuring just ripe bananas, oats, and cinnamon (occasionally chocolate chips). While that basic combination is absolutely delicious and could not be more fool proof – this one packs a bit more of a punch! However, it is still very easy and infinitely adaptable. For my mix-ins, I did a combination of vegan chocolate chips, pumpkin seeds, and raisins – equalling one cup total. I imagine you could get wild here and try dried cranberries, white chocolate chips, sunflower seeds, golden raisins, cinnamon chips – sky’s the limit! I also love that this breakfast cookie is entirely gluten free and refined sugar free. The only sweeteners used are the banana (make sure yours is extra ripe) and maple syrup. A couple of these will certainly keep you going until lunch or serve perfectly as a mid morning snack. Be warned though, they may not last that long if you opt to share – Andrew took a bunch to his office and they were gone by 10am.
