A healthy indulgence to satisfy any chocolate craving.
Happy Valentine’s Day! Apologies that this post is going up a day late as I had planned to have it go live yesterday, but we have had some unfortunate family emergencies this past week. Andrew and I did postpone our trip to Charlottesville, so we will actually be going in early March instead. Nevertheless, I wanted to give you this recipe today in case you were still in need of some last minute Valentine’s day inspiration. Yet, realistically this dessert would be delicious any day of the year as it is full of chocolatey goodness, healthy fats, and takes mere minutes to whip up.
I do have a confession to make – I don’t really love avocados. (I know that is sheer insanity to many who worship at the avocado altar, like my mom and husband). It’s not that I don’t like them, I mean I’m not a monster – I definitely enjoy my fair share of guacamole, but I cannot get behind eating them plain like on the ever popular avo toast or atop a salad. It’s something about the earthy aftertaste that I just can’t seem to get behind, not to mention the fact that they have to be perfectly ripe or else it is simply a disaster for your tastebuds. However, I also know that avocados are chock full of incredible nutrients like Vitamin K, Potassium, Vitamin C, and Folate to name a few. They also contain a ton of fiber, can help lower cholesterol, and thanks to the healthy fats – help keep you feeling fuller longer. Thus, I think that it can’t hurt to incorporate them into dishes wherever possible and when mixed with other things, I often find avocados to be quite delicious.
The inspiration for this recipe came this past summer when my mom and I were in New York City. We had been running around all day and around 2pm realized that we were famished. We stopped in at a small restaurant that I had been wanting to try in the Village, called Ellary’s Greens. We ordered some smoothies, but also knowing what an avocado lover my mom is, decided to share their chocolate avocado mousse. This mousse turned out to be absolutely divine – I had tried avo mousse before, but was never quite satisfied as I could often still taste the earthiness left behind from the avocado. (Not exactly what I’m looking for in a chocolatey dessert). Yet, this one was different – simply rich, chocolate goodness and we devoured every last drop. Below is my recreation of this fabulous dessert from Ellary’s. I promise you will not even know that there is an avocado in there!
I hope that you have a great day and whether you celebrate Valentine’s or not – sending love!
