Confessions of a Fruit-aholic…
I love fruit, always have and always will. As a child I have vivid memories of asking for more sweet as sugar cantaloupe in the summer rather than cake. Also, my mom purchasing fresh pints of strawberries at the Farmer’s Market for me to consume rapidly in one sitting. 🙂 Luckily I married another fruit obsessive! At a restaurant we will order the fruit dessert over the chocolate, caramel, peanut butter concoction every single time. To me there is truly nothing better than fresh blueberry pie a la mode in the summer. However, a close runner up would have to be any sort of fruit crisp – often times much more adaptable to the seasons and easy to whip up at home on a weeknight. (Plus, the fact that it can pass as an occasional breakfast – I mean it has fruit!! – is an added bonus).
A couple weekends ago, Andrew and I went apple picking and as is the case nearly every year, accumulated way more than we knew what to do with. Of course what first came to mind was an apple crisp of some sort – the quintessential dessert of Autumn. After a bit of research, we settled on this recipe from Minimalist Baker, one of our all time go-tos for delicious plant based, vegan recipes. I am thrilled to report that this one did not disappoint. Trust me – even if you are not a vegan you will not miss the butter and/or cream at all. Andrew took some leftovers to his office the following day and was happy to report that they were devoured within minutes.
The other lovely aspect of this crisp is how easily it can be altered based on what fruits are in season. In the summer, I think this would be mouthwatering with some fresh berries. Come winter maybe try swapping in some pears and in the spring – why not strawberry rhubarb? Fruit is always best when in season and often does not need anything extra added, but when you are feeling a little indulgent or having some guests over, this is a perfect recipe to have in your back pocket. Might I suggest serving alongside this or this?
